Trøndelag Feast: Berry soup with homemade ice cream for dessert

Trøndelag is Norway’s food basket. No other region in the country has such a wide variety of products - from high mountains down to the sea. Master chef Lars Erik Vesterdal has traveled around the county, gathering ingredients that Trøndelag locals have a strong connection to. The result is the Trøndelag Feast! A three-course meal that can be served to many guests, works both in summer and winter, and is sure to impress. The dessert consists of a berry soup served with homemade ice cream made from Røros sour cream. The soup can be served either warm or cold. You can use garden berries, store-bought berries, or wild berries you find in nature. Feel free to add your personal touch to the ice cream by using nuts, a good liqueur, or spices you like.

    Make the berry soup: gently heat sugar, berries, spices, the seeds from 1 vanilla bean, and apple juice/water over low heat. It should not boil—just warm enough to dissolve the sugar. Lightly crush most of the berries with a fork. Let it steep for about an hour.

    Make the ice cream: separate the egg yolks from the egg whites, and mix the egg yolks, the seeds from a vanilla bean, and sugar in a metal bowl. Whisk over a water bath until the mixture becomes thick and has a mayonnaise-like consistency. Let it cool, then add Røros sour cream. Whip the cream by hand until soft and airy, then gently fold it into the egg yolk mixture using a spatula. Pour the ice cream into molds and freeze for at least 3 hours.

    Serve the soup in a bowl together with the ice cream. Try to include whole berries if possible. Top with crushed skjenning and optionally some dried flowers for garnish.

  • 3 dl Cream
  • 2 dl Røros sour cream
  • 4 ss Sugar
  • 3 stk Skjenning (flatbread) from Røra Bakeri
