Trøndelag Feast: Berry soup with homemade ice cream for dessert
Trøndelag is Norway’s food basket. No other region in the country has such a wide variety of products - from high mountains down to the sea. Master chef Lars Erik Vesterdal has traveled around the county, gathering ingredients that Trøndelag locals have a strong connection to. The result is the Trøndelag Feast! A three-course meal that can be served to many guests, works both in summer and winter, and is sure to impress. The dessert consists of a berry soup served with homemade ice cream made from Røros sour cream. The soup can be served either warm or cold. You can use garden berries, store-bought berries, or wild berries you find in nature. Feel free to add your personal touch to the ice cream by using nuts, a good liqueur, or spices you like.

Serve the soup in a bowl together with the ice cream. Try to include whole berries if possible. Top with crushed skjenning and optionally some dried flowers for garnish.
