Approach

    Coarsely chop the salmon meat and put it in a food processor with the chopping blade. Add salt, pepper, herbs and nutmeg and run the machine for about 30 seconds. Add the potato starch and run for about 30 more seconds. If you want a coarser salmon mince, just stir the ingredients together with a spoon instead.

    (If you're going to use the mince for pudding/terrine, you can add 1 egg and mix it well into the mince. Also gradually add a little cream/milk at a time.)

    Fry in a pan with a little neutral oil, about 1 minute on each side. The burgers can be a little pink inside if you're confident in the quality of the fish.

  • 500 g Salmon
  • 2 ts Salt and pepper
  • 0.5 ts Nutmeg
  • 2 ss Potato starch
  • 2.5 dl Cream or milk (can be omitted)
  • 1 stk Egg (can be omitted)
  • 2 ss Chili/spring onion/chives/cilantro (can be omitted)
