Potato puré

Peel the potatoes, and steam or boil them until tender. If you've made fondant potato, the trimmings from that are excellent to use for mashed potatoes.

When the potato is tender, drain off the water and let the potato steam itself completely dry. Mash the potato with a potato masher or with the paddle attachment in a stand mixer.

Melt butter and heat milk in a pot, and stir this into the mashed potatoes.

Season to taste with salt and pepper, and possibly a bit of nutmeg. Finely chopped fresh herbs can be added just before serving.
