Poké bowl with salmon

Approach

    Start by cooking the barley according to the package instructions, and let it cool before using it. Rice is usually used, but instead we “Norwegianize” it by using barley.

    Slice the salmon into thin pieces or bite-sized chunks, and make a marinade to soak the fish in. The marinade is made by mixing soy sauce, grated ginger, the juice and zest of one lime, and chopped chili. Let the fish marinate for about 20 minutes.

    While the salmon is marinating, cut the cucumber, sugar snap peas, avocado, chives, and mango into suitable pieces.

    To serve: Start with the barley at the bottom of a bowl and place the salmon on top. Arrange all the other ingredients around it, and finish by sprinkling a little chili, chives, some of the marinade sauce, toasted sesame seeds, and lime on top. Then you have a Trøndelag-style poké bowl!

  • 100 g Barley grains
  • 0.5 stk Cucumber
  • 1 stk Chili
  • 8 stk Sugar snap peas
  • 1 stk Lime
  • 1 stk Avocado
  • 5 ss Chives
  • 0.5 stk Mango
  • 4 stk Radish
  • 1 ts Ginger
  • 2 dl Soy sauce
  • 4 ss Toasted Sesame seeds
