Juniper-smoked Arctic char from Namdalen

Approach

    Make the waffle batter: Start by melting the butter. Blend cultured milk, whole milk, sugar, eggs, melted butter, salt, and baking powder using a hand blender. Gradually add wheat flour while blending until you get a smooth batter. Let it rest for 30 minutes before cooking the waffles.

    Make the Snøfrisk cream while the waffle batter is resting: Place the Snøfrisk in a bowl, squeeze in some lemon, and mix in cream. Season with chives to taste.

    Cook the waffles: Cook the waffles a little longer than usual so they become golden and crisp. Then cut out heart shapes using scissors.

    To serve: Spread the waffles with the Snøfrisk cream, then top with slices of smoked Arctic char. Grate horseradish over and finish with garden cress. Enjoy!

  • 100 g Whole milk
  • 1 stk Egg
  • 50 g Melted butter
  • 2 ts Maldon salt
  • 250 g Snøfrisk (Norwegian fresh goat cheese)
  • 2 ss Lemon juice
  • 3 ss Chives
  • 4 ss Cream
  • 200 g Arctic char
  • 2 ss Horseradish
  • 2 ss Garden cress
