Hasselback carrots

Wash, and peel if necessary, the carrots thoroughly. If the carrot looks nice, it's fine to keep the skin on.

Place a carrot between two wooden spoons or a folded kitchen towel. Use a knife to cut almost-slices down into the carrot. Place the carrot in an ovenproof dish with the cut side up.

Mix together olive oil/melted butter, lemon juice, honey, salt and pepper. Drizzle or brush this mixture over the carrots so that it gets into the cuts you made.

Bake the carrots in the oven at 200 degrees for 15-25 minutes, depending on the thickness of the carrots. Sprinkle with toasted seeds or nuts when serving.

- 2 ss Olive oil or melted butter
- 2 ss Juice from lemon or orange
- 2 ss Honey
- 1 ts Salt and pepper
- 2 ss Toasted pumpkin seeds, hazelnuts or pistachios
