Gazpacho with greens from Frosta

Approach

    Put everything except the ricotta, red onion, and basil in a blender. Blend for 3–4 minutes. Season with salt, tabasco/cayenne pepper (optional), and black pepper.

    Slice the red onion thinly. Marinate the ricotta cheese in olive oil, salt, pepper, lemon juice, and lemon zest. Pour the soup into a bowl, and top with the ricotta, red onion, and basil. Enjoy!

  • 500 g Large tomatoes from Frosta
  • 15 stk Cherry tomatoes
  • 1 stk Bell pepper
  • 1 stk Green chili
  • 1 ss Ginger
  • 1 stk Celery
  • 1 stk Cucumber
  • 1 dl Tomato juice
  • 1 ts Salt and pepper
  • 2 ss Olive oil
  • 200 g Ricotta
  • 1 stk Lemon
  • 1 stk Red onion
  • 1 stk Basil
