Frode Fjellheim's reindeer shaved meat stew
The signature dish of Frode Fjellheim is reindeer shaved meat stew. He uses the original recipe as a starting point. Reindeer skav is thin slices of reindeer meat, cut with a sharp knife, ideally while the meat is still frozen. This year he bought a whole reindeer, but it is also possible to buy pre-sliced packs of reindeer skav from the store. It is important to brown the meat and add juniper berries, salt, and pepper. Juniper berries are something I remember from my childhood; they are an amazing spice. You slice the juniper berries thinly with a sharp knife because texture is just as important as taste and aroma. When you eat it, you get sharp and flavorful bursts of juniper. Cream does the trick, and then the stew is left to simmer for quite a long time. When guests arrive, especially if they can’t keep time and show up late, it is brilliant to have a reindeer stew gently cooking over heat—it is just as good after a while. And sometimes I add chili. I think my father would consider that completely unnecessary.

Heat a large frying pan and sauté the onion until golden and soft in a mixture of butter and oil. Transfer the onion to a suitably sized pot. Fry the mushrooms in the same pan, season with salt and pepper, and add them to the pot.

Reheat the pan and quickly sear the meat over high heat (preferably in batches so the pan doesn’t cool down and the meat starts to boil instead of brown). Season with salt, pepper, fresh thyme, and juniper sprigs.

Transfer all the meat to the pot and add cream. Bring everything to a boil, then let it simmer for about 10 minutes. Stir in crème fraîche and blackcurrant syrup or redcurrant jelly. Adjust the seasoning with salt and pepper if needed.

- 0.5 stk Broccoli
- 0.5 stk Cauliflower
