Confit salmon
Confiting fish is an old tradition for preserving fish using salt, fat and low temperature. Other types of fish besides salmon can be used for this recipe.

Sprinkle a little salt on the salmon fillets and let it sit with the salt for 15-20 minutes.

Add herbs and garlic cloves to the oil and heat it to 50-60 degrees in a pot. Place the fish in the oil, or place the fish in an ovenproof dish and pour the oil over it.

Keep the oil warm, ideally place it in a preheated oven at about 60 degrees, and let the fish sit until it's heated through. This takes anywhere from 5-10 minutes.

The fish can be stored in the oil if it's not going to be served right away, but take it off/out of the heat.

- 2 dl Oil
- 4 ss Herbs (parsely, thyme, rosmary, sage)
- 2 stk Garlic cloves
- 2 ts Salt
