Chocolate mousse with 2 ingredients

Separate the eggs into yolks and egg whites. Whisk the egg whites until stiff.

Melt the chocolate over a water bath, preferably in a large bowl. The water shouldn't boil, and the bowl shouldn't touch the water, as the chocolate can scorch. Remove from the water bath as soon as the chocolate has melted.

Stir the egg yolks into the melted chocolate. Then fold the whisked egg whites into the chocolate, 1/3 at a time. Make sure you retain the air from the egg whites.

Pour the batter into suitable glasses, and let it sit in the fridge until the mousse has set. Alternatively, you can pour it into a piping bag and pipe the mousse as you like.
